Who we are

Cambridge Capsicum Analytics is the only laboratory in the United States that focuses solely on researching chili peppers and capsaicinoids. We partner with local, domestic, and international research groups and labs. Utilizing state-of-the-art technologies, we provide our clients with the answers they need.

Why Capsicum?

Capsaicin, present in most members of the Capsicum genus, possesses an extraordinary versatility. Across the ages, chefs around the world have accented their dishes with it. Entire cuisines have centered around it. Doctors use it as a surgical anesthetic and prescribe it in pain relieving ointments. The spicy power of the pepper has even been weaponized through the extraction of capsaicin delivered as pepper spray.

Fascination drives our research. Expertise informs it. Having researched the chemical properties of over 50 chili pepper cultivars sourced from around the world, we bring our knowledge and passion to every project we work on, from food quality assurance to applied chemical analysis to hydroponic pepper farming, and much more.
